I have three weeks left in Ireland. It seems very odd to me. I will miss Ireland, but at the same time I will be glad to go home for good. I hope that someday I will be able to return.

Today, my friend Katie and I experimented in the kitchen. Originally our plan was to make chicken wraps since that was the recipe we had, but neither of us likes meat very much and the chicken looked really raunchy we tasted it and then that was pretty much it. We had the option of chicken but instead, we added more bell peppers to the recipe than chicken. For anyone interested (again with the indulgence in the idea that I have readers):

Oriental (Chickenless) wraps:

2 cups of rice

Tortillas

A can of green beans (or fresh)

Sweet and Sour sauce (or soy)

Peanut Sauce (optional)

2 bell peppers (optional)

2-4 green onions

1 onion (optional, works well if you get sweet and sour sauce with onions mixed into it)

A can of peas and carrots (or fresh, again optional)

1. Preheat your oven to 350 degrees farenheit. We put it to 200 degrees Celsius and were fine (for anyone working in Celsius). Wrap your tortillas in foil and set `em in the oven for about ten minutes. Then turn off the heat and leave them in there until you're ready to eat them. Be careful if you rest all of the tortillas on top of each other as they will stick and break apart if you pull on them.

3. While the rice is cooking wash and chop your veggies or drain the juices from the cans, whatever you need to do. The recipe said to cook them in a pot undrained but it worked better for us to stick them in a pot with about an inch of water and let them sit in hot water for a while. We both like our veggies in a still crunchy state so it only took about ten minutes before they were done.

The recipe said to mix all of the ingredients together once they were cooked but it works equally well to just set them up in a Thanksgiving style and pick and choose what you want in your tortilla. Oh, I'm told the peanut sauce is spicy so if you don't like spicy then watch out. I personally think it's very mild, but then jalapenos don't bother me that much so I might not be the best judge.

Oh, you can add chicken too if that's your bag, baby.
